I finally experimented with a green vs. golden kiwi curry, and the results were way more exciting than I expected!
Both versions were made using the exact same curry base, but the flavor profiles turned out surprisingly different. The green kiwi curry (which I’m sharing today) has a sharper tang and a refreshing brightness.
The golden kiwi curry, on the other hand, was naturally sweeter, less sour, and beautifully smooth. If I had to pick a winner, golden kiwi takes the crown… but both were delicious in their own way!
I also tested crushed spices vs. whole spices for this recipe — and crushed spices stole the show. The aromatics hit harder, the fragrance blooms instantly, and with the golden kiwi especially, everything melts together into the perfect balance of sweet, creamy, and warm.
So what are you waiting for? Let's get cooking!
Ingredients:
4 kiwis
1 garlic clove
½ tsp ginger (or a 1-inch piece, minced)
8 curry leaves
2-inch piece pandan leaf
1-inch piece cinnamon
3 cardamom pods
3 cloves
¼ tsp fenugreek seeds
¼ tsp mustard seeds
1 tsp chili powder
1 tsp curry powder
¼ tsp turmeric
¼ cup water (adjust as needed)
¼ cup coconut milk
½ tsp salt
½ tsp sugar
Oil, for cooking
Directions:
1: Prepare the kiwis:
Peel and cut each kiwi into four pieces. Set aside.
2: Temper the spices:
Heat a little oil in a small pan. When hot, add the curry leaves, garlic, ginger, pandan leaf, cinnamon, cardamom pods, cloves, fenugreek, and mustard seeds. Sauté until fragrant.
(You can also crush the ginger, garlic, cardamom, and cloves before adding for extra flavor.)
3: Add the powdered spices:
Add the chili powder, curry powder, turmeric, and salt. Stir well to coat the spices in the oil.
4: Add the kiwis:
Gently add the kiwi pieces to the pan and carefully stir to combine. Be gentle so the kiwis don’t break apart.
5: Create the curry base:
Pour in the coconut milk and water. Adjust the water amount depending on the thickness of your coconut milk.
6: Finish the curry:
Just before removing from the heat, add the sugar and check for salt and gently stir. Adding these at the end helps balance the flavors and thicken the gravy slightly.
Serve this vibrant and delicious kiwi curry with soft bread, flaky rotis, or a bowl of warm, comforting rice!
