Quick and Easy Chicken Biryani | A Lazy Man's Chicken Biriyani

Let’s be honest — we all love a good chicken biryani, but not everyone has the time (or energy) to go through all the marinating, layering, and long ingredient lists. That’s why I made this lazy one-pot biryani — a shortcut version that still delivers on flavor, without all the work.
It’s perfect for tired students, broke bachelors, lazy weekends, or honestly… anyone who just wants chicken biryani without the stress.
So let’s get this chicken biriyani cooking!
Ingredients:
700g chicken, bone-in thighs work great (cut into small pieces)
½ packet Shan Mutton Biryani Mix (yes, mutton — trust the process)
1 tsp Kashmiri chili powder (optional — skip if you don’t like the heat)
½ cup curd (plain yogurt)
2 cups basmati rice, washed and drained
4 cups water, to boil the chicken and make broth
A handful of cashews (optional, but worth it for the crunch)
Ghee or oil, for frying (any neutral oil works)
Directions:
1:Marinate
Cut the chicken into small pieces and pat dry.
Mix with curd, Shan biryani mix, and Kashmiri chili powder.
Let it sit for at least 30 mins, or even better — overnight in the fridge.
2:Make the broth
Dump the marinated chicken into a large pot with 4 cups of water.
Bring it to a boil and simmer for 10–15 minutes to cook the chicken and make a quick broth.
Once done, separate the chicken and broth. Set both aside.
3:Flavor Boost
In the same pot, add some oil and toast the cashews till golden. Remove and set aside.
Add more oil if needed and fry the boiled chicken pieces till golden and slightly crispy. Set aside.
4:Rice In
Add the washed rice into the same pot with the leftover oil.
Pour in 3 cups of the chicken broth (top up with water if you don’t have enough).
Place the fried chicken and cashews on top of the rice.
5:Cook It Your Way
Cover and cook on low until rice is fully done, about 15–20 mins.
OR transfer the whole thing to a rice cooker and let it handle the job.
6:Mix & Serve
Once done, gently mix the rice and chicken before serving.
Pair the chicken biriyani with some raita, onion salad, or just eat straight from the pot like a real bachelor.
